Crowd Pleasing Corn Salsa

This is my all time favorite snack to bring with me to any get-together. It is so pretty and colorful; I always make it with different colored peppers. This is great for summer cookouts; it keeps well and is super flavorful.

Since my home has Brazilian roots, our year round gatherings ALWAYS include rice, beans and grilled meats. This salsa serves as a great veggie vinegrette to go with the rice or over a tossed salad. The best part is it can be made the night before so its a great time saver and actually I think it tastes better if it marinates overnight.

Crowd Pleasing Corn Salsa

  • 1 can white shoepeg corn, drained
  • 1 can black eyed peas, drained
  • 2 medium bell peppers, chopped (seeds removed)
  • 1/2 medium sweet onion, chopped
  • 1/4c sugar
  • 1/4c apple cider vinegar
  • 2Tbsp tiger sauce


Finely chop onion and peppers. Drain corn and beans and combine in a large bowl with peppers and onion. Add sugar, apple cider vinegar, and tiger sauce. Stir to combine and refrigerate for at least an hour. The longer it sits, the better it is. I usually make it the night before I need it. Serve with your favorite tortilla chips and voila! Store in an airtight container in the fridge for up to a week.
